8 q! ?3 n3 c% `7 Y% Z0 x1 nMany researchers blame highly processed carbohydrates, such as high fructose corn syrup and white flour.

Now scientists at the University of Wisconsin in Medicine have started to tease out the role of the liver in converting those calorie-rich foods into fat. 7 r: u6 [" f6 d6 q' u- Z9 E0 D! P8 f
% {! A- P5 T, k# t7 i4 f1 N S
The researchers isolated a gene in the liver called SCD1, the gene codes for an enzyme that synthesizes fatty acids.
( A6 n6 }0 T6 u& [7 j$ `) g( l
- g9 q5 t3 a0 W! r4 g# r) M- QMice with the normal gene were fed a diet high in processed carbs. The mice converted those carbs into fat and stored that fat in the body.

5 M5 f$ c3 b" b. v- m" @. ?$ EBut the mice that lacked that SCD1 gene just burned all those carb colories and stayed skinny.

6 K* S/ D8 H: s, [4 q7 } rThis finding reveals that the liver determines whether or not eating refined carbohydrates will lead to fat gain. 8 ?7 r7 i" H7 B4 @+ ~) _4 e
; m+ s9 ^3 X% P3 M, kThe researchers say the system is a good example of a direct diet gene interaction. * V8 V) T. D Y. [: I3 ~& G
9 W }& h2 ^2 r0 {$ ]4 h+ ~; IBut they also say that a drug to turn off that fat making liver gene wouldn't be a good idea. 0 }/ @7 R) F* C1 `* h' x
$ q/ G6 H( M$ f" z$ hWithout that gene, the mice could no longer make glucose. They ended up hypoglycemic, suffering from low blood sugar.
